Varenyky (Pyrohy/Peroghi)

Ukrainian cooks take great pride in the quality of their cooking. We use only the best and freshest of ingredients. The varenyky dough and fillings are prepared in small batches, the way they are made in Ukrainian homes.

Many Eastern European nationalities have their own versions of varenyky and preference for fillings. Our fillings are sauerkraut, cheese, potato or plum. The traditional accompaniment to varenyky is "smetana"' (sour cream). Also popular is chopped onion browned in butter, or chopped crisp bacon. Whichever way you prefer them, "Smachnoho''! Enjoy!

To prepare Varenyky (pyrohy/ peroghi)

Varenyky are ideal for the busy homemaker. They may be reheated without any loss of quality. In fact, many prefer reheated varenyky to freshly boiled ones.

To reheat varenyky, follow one of the following methods:

  1. Pan fry the varenyky in butter, margarine, or bacon fat until they are a light golden color. This process makes the dough crisp.
  2. Heat the varenyky covered in the top of a double boiler or in the oven until they are hot and plump. Add a little water and butter or margarine to the container; before eating.
  3. Bring to a boil 2 or 3 tablespoons of milk and some butter or margarine in a frying pan. Place a layer of varenyky in the pan, cover, and cook them over a medium heat for 45 minutes or until they are thoroughly heated. Turn them over and cook the other side, covered for rich golden brown varenyky, follow the same method, but cook them slightly longer and remove the cover after they are turned over.
  4. Place butter or margarine in a frying pan along with chopped onions. Place the varenyky in a layer on top of the onions, cover and cook slowly until the onions are golden and the varenyky are heated.
  5. Place pyrohy, covered, into the Microwave and set on high for several minutes, or until desired temperature.
